Smoky Sausage Casserole

A recipe that I made up the other day as I wanted something to make for lunch and I was struggling for ideas.



  • 4 - 6 Sausages
  • 1 Carrot*
  • 4 Rashers of Bacon
  • 1 Medium Onion
  • 1 Medium Leek
  • 3 Cloves of Garlic
  • 2 Tins Chopped Tomatoes
  • Half to One Teaspoon Chilli Flakes (or fresh chillies, or chilli powder)
  • One to Two Teaspoons Smoked Paprika
  • Salt and Pepper


* Carrot can be included if you're not worried about a bit of root based vegetable carbohydrate



  1. Chop the onion finely and fry in coconut oil on a low heat
  2. Chop the leek and add to the onion, frying both until soft
  3. Chop the carrot into smallish pieces and add to the onion/leek mixture
  4. Fry the sausages in a small amount of coconut oil or equivalent
  5. Chop up the bacon and add towards the end of the sausage cooking process
  6. Add the bacon to the onion and leek mixture
  7. Add the sausages after chopping them up into pieces
  8. Add the garlic, either crushed or chopped and fry with everything else for a minute or two
  9. Add both tins of tomatoes, the smoked paprika and the chilli
  10. Simmer for about 15 - 30 minutes, adding salt and pepper to taste. I generally like a bit of bite left in my carrots, but each to their own.

Clearly there is a lot you can do with this (in terms of adding other ingredients) but the basic recipe is just the right level of smokiness and heat for a cold winter day :)
