Keto Pancakes


Here's the original recipe at Ditch the Carbs -


A few key pointers: -

  1. Because of the coconut flour, they burn VERY easily. Do them on a low heat, and turn *before* you think they're ready. They'll splat a bit, but if you wait until the top has begun to firm up, the bottom will be burned.
  2. You have to make them quickly, as the mixture solidifies very fast. The mixture lasts (literally) a few minutes
  3. Don't make them two big (see (1) above - you'll never be able to turn them)


My reduced amounts (for one person - makes 2 - 4 depending on size): -


  • 2 Eggs
  • 1 and 1/2 tbsp Coconut Flour
  • 40(ish)g of Melted Butter
  • 1/2 tsp Baking Powder
  • 1 and 1/2 tbsp Milk
  • 1 tsp Vanilla Extract
  • 1 tsp Honey (optional)
